Iris's green olive chicken GREEN OLIVE BAKED CHICKEN
3/4 cup pitted green olives, halved
Whole chicken, cut into pieces
4 cloves garlic, peeled and halved
1/2 cup chopped flat-leaf parsley
2 tbsp. grated lemon zest
8 oz. cherry tomatoes
Cracked black pepper
Sea salt
2 tbsp. olive oil
Preheat oven to 400 degrees. If olives are very salty, soak them in cold water for 5 minutes. Drain.
Place chicken in baking dish in single layer, skin side up, with a piece of garlic under each chicken piece. In a medium bowl combine olives, parsley, lemon zest, cherry tomatoes, pepper, salt and oil. Spoon evenly over chicken parts.
Bake 45-55 minutes uncovered until chicken is golden and cooked through. Place on serving plates and drizzle pan juices over chicken. |
