Cassinellis win Sisterhood's cheesecake competition
Julie and Seb Cassinelli produced the winning cheesecake at Sisterhood's Shavuot dinner competition. It was not an easy decision for the panel of expert judges -- but it was a tasty one.
The Shavuot service and dinner honored our young people's teachers, which explains the name for this dynamic duo's winning recipe:
"We Love Teachers Cheesecake Recipe"
1/2 cup graham cracker crumbs
2/3 cup sweetened flaked coconut
1/3 cup sugar
1/4 cup butter
3 8-oz packages cream cheese
1/2 cup sour cream
1 cup sugar
5 large eggs
3 tablespoons fresh key lime juice
2 teaspoons finely grated key lime peel
3/4 teaspoon vanilla extract
Preheat oven to 350".
Stir graham cracker crumbs, coconut and sugar in a medium bowl. Drizzle melted butter over and mix until crumbs stick together. Press firmly in bottom of springform pan. Bake crust for 25 minutes. Cool crust.
Stack 3 large sheets of 18-inch tin foil (heavy duty) on work surface. Place cake pan in center. Wrap foil snugly around pan sides.
Maintain oven temperature.
Using electric mixer, beat cream cheese in large bowl until smooth. Beat in sour cream, then sugar, then eggs one at a time. Beat in lime juice, lime peel and vanilla.
Pour batter over crust.
Place wrapped cheesecake in large roasting pan. Pour enough hot water into roasting pan to come half-way up sides of cheesecake pan. Cover cheesecake pan loosely with foil.
Place cheesecake into oven (within pan). Bake 1 hour. Uncover and continue to bake untl just set in center when cake pan is gently shaken, about 20 minutes longer.
Remove cake and place directly in refridgerator. Chill uncovered overnight.
When ready to serve, place your favorite tropical fruit chopped up on top of cheesecake -- i.e.. mango, pineapple, papaya or a combination!)
