It is hard to imagine Caribbean cuisine without the benefits of the breadfruit. If eaten raw, the bulky fruits from this member of the Moraceae (Mulberry family) will act as a prompt purgative. However, flour from seeded breadfruit varieties has nearly four times the protein of cassava flour, a major foodstuff for developing tropical nations.
